Tips and tricks for Grilling Planks:
**Soak planks in water for 1-2 hours to absorb moisture preventing the plank from burning
**Set grill temperature at 350 degrees to 400 degrees
**Food does not have to be turned while on the grill
**Keep the grill lid closed as much as possible to stabilize temperature and maximize smoke
**Grilling planks can be used in the oven. Recommended temperature is 350 degrees to 425 degrees
**For a milder smoke flavor, substitute cedar plank for an alder plank

Grilling planks have flavors that join well with certain foods BUT…Have fun experimenting knowing you can’t go wrong with any combo. Here is a start up guide for your reference:

Cedar: a reminder of the Pacific Northwest. Adds a spicy flavor to favorites such as salmon (other fish too), seafood and veggies
Alder: a bit of sweetness and great with seafood, veggies and fruit
Maple: when you think of maple, think sugar…and sweet! A great choice for pork, pizza, pineapples and veggies
Hickory: bold smoke and a healthy does of flavor. Think BBQ at its finest. Use with wild game, beef, bacon, fruits and lamb

STARTER RECIPE IDEAS FOR GRILLING PLANKS:

CEDAR PLANKED CHICKEN WINGS
Total Time: 20 minutes
Servings: 4
Ingredients:
2 Cedar Planks
2 lbs. Chicken Wings
1/2 Cup Buffalo Wings Sauce
1/2 Cup Butter, melted
Cayenne Pepper to taste (if you like your wings hot)

Directions:
Soak the Cedar Plank for at least 1 hour.
Preheat oven or grill to 400°F.
Mix buffalo sauce with melted butter and cayenne pepper.
Toss chicken wings in sauce and place on plank.
Place planks on the grill or in the oven. Cook for 20 minutes, or until chicken is thoroughly cooked. (Internal temperature of 165°F)
Have a spray bottle of water handy for flare-ups.
Serve with celery, bleu cheese dressing

ALDER PLANKED SALMON WITH LEMON & DILL
Total Time: 20 minutes
Servings: 4
Ingredients:
Alder Plank
1 (2-pounds) Salmon Fillet, with skin
Salt & Pepper
1 bunch Fresh Dill, divided into 2
1 Lemon, cut into thin slices

Directions:
Soak Cedar Plank in water for 1 hour, keeping it immersed.
Preheat grill to 400°F.
Place salmon on plank, skin side down; season with salt and pepper, sprinkle with half of the dill and lay the thin lemon slices on the salmon.
Place the planked salmon on the grill and cook with the lid closed for 12-15 minutes.
Have a spray bottle of water handy for flare-ups.
Remove from grill. Let stand for 5 minutes then sprinkle with the remaining half of the dill.
Enjoy!

CHERRY PLANKED PORK CHOP
Total Time: 25 minutes
Servings: 4
Ingredients:
Cherry Plank
4 Pork Chops
1 Sweet Onion, sliced
¼ cup Dried Sweet Cherries
2 Tbs. Olive Oil, divided
2 Tbs. Maple Syrup
Salt & Pepper

Directions:
Soak Cherry Plank in water for 1 hour, keeping it immersed.
Preheat grill to 400°F.
Mix onion, cherries, thyme, 1 Tbs. olive oil, salt and pepper in a small bowl.
Evenly spread the onion mixture on the plank.
Place pork chops on top of the onion mixture, drizzle with other 1 Tbs. olive oil and maple syrup. Season with salt and pepper.
Place loaded plank on grill, close lid and cook for 20 minutes or until the pork chops are done.
Have a spray bottle of water handy for flare-ups.

MAPLE PLANKED CARROTS WITH PARSLEY
Total Time: 20 minutes
Servings: 4 as a side dish
Ingredients:
Maple Plank
6 Large Carrots
Fresh Parsley
2 Tbs. Olive Oil
Salt & Pepper

Directions:
Soak the Maple Plank for at least 1 hour.
Preheat oven or grill to 400°F.
Wash carrots and slice in half, lengthwise.
Place carrots on plank and top with salt and pepper, olive oil and fresh parsley.
Grill with the lid closed for 15-20 minutes.
Have a spray bottle of water handy for flare-ups.
Remove from grill and serve.
Enjoy!

HICKORY PLANKED STEAK
Active Time: 20 minutes
Total Time: 3 hours
Servings: 6
Ingredients:
Hickory Plank
2 pounds Flat Iron Steak
Dry Rub:
2 tsp. Kosher Salt
2 tsp. Brown Sugar
2 tsp. Chili Powder
½ tsp. Ground Black Pepper
½ tsp. Cayenne Pepper (optional)
½ tsp. Garlic Powder
½ tsp. Cumin

Directions:
Mix all the dry rub ingredients in a small bowl.
Rub seasoning mix evenly on the Flat Iron Steak; refrigerate 2-4 hours.
Soak Hickory plank for 1 hour, keeping it immersed.
Preheat grill to 400°F.
Place seasoned Flat Iron Steak on the Hickory plank.
Grill with the lid closed for 8-10 minutes.
Have a spray bottle of water handy for flare-ups.
Remove from grill and rest for 5 minutes before slicing.
